VEAL
The production of Veal in Australia is associated with dairy and beef industries. Light weight carcases weighing less than 70kg are typically produced from dairy calves (milk fed). Carcases weighing up to 150kg are produced from vealers or weaners that have had a diet of milk and grass. As a result of grass feeding, these heavier carcases display a light pink muscle colour.
